Zucchini is such a plentiful summer vegetable that it’s nice to create fun, easy, and of course DELICIOUS recipes.  Served hot or cold, ground walnut transforms this squash soup from a dull broth into a lusciously creamy and nutty masterpiece!

What You’ll Need ( Ingredients):

  • 4 zucchini, chopped ( with peel)
  • 2 cups vegetable broth 
  • 1/2 cup finely ground walnuts (about 15 walnuts), and 4 whole walnuts, coarsely chopped (optional, for garnish)
  • 2 cloves roasted garlic 
  • salt & pepper to taste


What You’ll Do (Directions):

  1. Combine stock and chopped zucchini and cook 20 minutes or until zucchini pieces are cooked through
  2. Add in roasted garlic, add now
  3. Add the ground walnuts
  4. Remove from heat and blend with an immersion blender or in a standing blender in batches, filling blender halfway each time
  5. Lightly season with salt / pepper to taste
  6. Garnish with toasted walnuts & dried parsley ( optional)
  7. Serve hot or cold & enjoy!
