A couple of nights ago,  after being alerted that I was going to have company over  ( gotta love the friends who invite themselves over!), I realized I had to come up with a quick dish that wasn’t too  elaborate (due to lack of time) but still yummy & filling.  I thought this pizza dish was perfect for a meal for 2 ( with leftovers to spare, yay!). I had the pie crust ready to go, so it was just a matter of me going to town with the toppings.  It went a little something like this:

 

Ingredients

  • 1 pizza crust ( I used whole wheat)

  • EVOO

  • garlic powder
  • 1 1/2 chopped peppers ( green, red, orange)
  • 1 large tomato – chopped
  • alfredo sauceBudding Vegetarians: Vegetarian Pizza
  • 2  1/2 cups fresh shredded cheese ( I used a mozzarella, cheddar & provolone mix )
  • 2/3 cup fresh spinach
  • 1/2 cup chopped onions
  • parsley & oregano to taste

Directions

  1. In a skillet,  take desired amount of “meat” ( I used about 1/4th of the pack) and break into pieces ( about as big as a dice).  Season with desired flavors over medium heat for about 3 minutes, then set aside.
  2. Brush a light coat of extra virgin olive oil over the pizza crust making sure to cover out to the end of the crust. Do not over saturate with oil as this can cause the crust to become soggy ( and oily)
  3. Coat with a few dashes of garlic powder
  4. Add on alfredo sauce  ( again, being careful not to put too much). I used about 1/3 of the jar
  5. Shake on dried parsley & oregano for extra flavor

  6. Top with fresh spinach – I used whole leaves and fit about 15 on the pizza
  7. Add on seasoned meatless “meat”
  8. Cover with 1 cup of cheese mix
  9. Add on peppers , onions & tomatoes
  10. Add on remaining cheese
  11. Lightly drizzle evoo on top of entire pizza

  12. Cook at 450° for 8-10 mins ( depending on how crispy you like it)
