So , I came up with this in one of my fridge raids and it was AMAZE!! I was in the mood for something healthy yet hearty and this was the perfect meal to close out the night.  The cheese sauce was a nice touch with the salmon and complimented the rice just right!

Wild Brown Rice

Ingredients:

  • 1 cup of wild black rice
  • 1 cup of brown rice
  • 2 tbsp on extra virgin olive oil
  • 1/3 medium-sized yellow onion
  • salt & pepper to taste
  • 2 tbsp minced garlic
  • 4 1/2 cups water

Directions

  1. In pot & on high heat,  add in 2 cups of water,  1 tsp of olive oil and 1 tbsp of minced garlic then bring to boil
  2. Add in wild rice & onion as well as salt & pepper seasoning to taste
  3. Cover & lower heat and let cook for 20-25 minutes

  1. In a separate pot, on high heat,  add in 2 cups of water,  1 tsp of olive oil and 1 tbsp of minced garlic then bring to boil
  2. Add in brown rice & salt & pepper seasoning to taste
  3. Cover & lower heat and let cook for 20-25 minutes

Once both sets of rice are cooked mix together…

California Veggie Cheese Sauce

Ingredients:

  • 3 tbsp butter
  • 2 tbsp flour
  • salt to taste
  • pepper to taste
  • garlic powder to taste
  • paprika to taste
  • 1 1/2 cup almond milk
  • 1 1/2 cup mozzarella & cheddar cheese combined
  • 1 bag of frozen california veggies ( carrots, broccoli & cauliflower)

Directions

  1. Melt butter in the saucepan over medium heat then add flour and mix gently until lumps are gone
  2. Slowly stir in milk & cheese & seasonings and let heat for approx 3 minutes
  3. add in veggies &  cover for another 6-10 minutes
  4. add in more seasonings to desired taste

while cheese sauce is heating, prepare the onions & salmon like so:

Caramelized Onions

Ingredients:

  • 1/2 yellow onion
  • 2 tsp nutmeg
  • 1 tsp salt
  • 1 1/2 tsp granulated cane sugar
  • 1/2 tsp cinnamon
  •  1 tsp extra virgin olive oil

Directions:

  1. Heat olive oil in skillet over medium heat and add in onions
  2. add in spices & sugar until coating all onion slices
  3. cover and heat for 8 minutes or until onions are soft

Baked Salmon

Ingredients:

  • 1 thawed out salmon filet
  • lemon pepper seasoning
  • 1/2 tsp extra virgin olive oil
  • pinch of salt

Directions

evenly coat salmon with all ingredients on both sides and heat in oven for 6-8 minutes at 350 ° until slightly flaky  ( be careful not to over-cook as salmon can get ‘rubbery’  if cooked too long)

Put all together and enjoy!
